Liz made fresh linguini yesterday afternoon while looking for activitites to do with Parisa and her cousins. When I got home I whipped up a dinner using whatever I could find leftover in the fridge from Friday’s pizza night with friends. Made a pan sauce with (nearly) carmelized onions, garlic, chicken sausage, sliced mushrooms, chopped multi-color cherry tomatoes, and generous amounts of dried basil and oregano (no fresh herbs in the house this time).
Garnished with some fresh buffalo mozzarella and romano, and you have a brilliant 20 minute dinner.
